I can't get my picture to keep from posting sideways, but here ya go, anyway.
The kids had carrot sticks, strawberries, baked tofu,
and Raw Chocolate Chip Cookie Dough Balls.

And I got to use baking cups (folded inside-out so the color is visible) I received from my super swap partner!

Baked tofu:

I froze tofu (the kind in water usually found in the refrigerated section of the produce dept.), then let it thaw. This helps it become more dense and chewier. I cut it into strips, rolled them in olive oil followed by corn meal and salt. I baked them for about 20 minutes at 350 degrees. I know I just lost 3/4 of you at the word "tofu," but they're a hit in my house. :)

I got the recipe for Raw Chocolate Chip Cookie Dough Balls from Averie at Love Veggies and Yoga. First, you pulverize cashews and oats. Add agave nectar (or maple syrup...or honey, if that's what you use) and vanilla. This makes the dough, then add chocolate chips.

Roll them into balls, and they're ready to eat. The kids ate the whole batch. (This made about 15 balls. When I make it again, I'll double or triple the recipe for our family of 5.)

The kids finished all of their food, and my 10 year old came back for refills on everything.

And now I'm off for an afternoon of playing games with the kids...it looks like it's going to be Kerplunk, Diego 1,2,3, and the Brown Bear, Brown Bear, What Do You See? game.

How cool - I want to try both of these. Of course I will have to wait for the oven to be fixed for the baked tofu.

Yum! Never tried tofu like that! Do you drain the water out before you freeze it? I'll have to give that a try! Also, love the cookie dough balls...wish I could find an alternative to the oats (I have a gluten-sensitivity and avoid oats). I've been loving Averie's peanut-butter chocolate chip balls though, I use cashew butter for them...delicious! ( :
